Do you know finger millet? Red in colour (lots of iron) and the glaze after cooking seems different. Common in Rajasthan.

Yes finger millet is very good as long as it's not lab made hybrid .

Glad to see someone with knowledge on gut flora. The good bacteria in there LOVES vegetables. We should involve light cooked/ steamed veggies in our diet. A good portion of it. This prevents dysbiosis.

gut health has taken more prominence over the years.  

The gut is seen as a second brain and there is research that suggests that conditions such as altzheimers starts in the gut.

Just wondering if having dahi and achar helps with gut flora. 

I know that sauerkraut and kimchi is supposed to be good for the gut but wonder if achar does the same.

yeah if you are eating homemade rather than heat treated canned stuff .
