Will I become a better Sikh if I don't eat meat? Or worse if I do?

I wouldn't want an additional karmic debt of killing an animal just for my taste buds or physique.

If there's a health reason for you to eat meat, opt for jhatka , as halal is torture for animal.

Sri Guru nanak sahib wasnt against eating meat, and thus Sikhs shouldn't be either. Meat as part of a healthy balanced diet is good for the body. Sikhi isn't against eating meat however it is against the ritualised cruel inhumane methods of killing (halal and khoser) an animal in order to get the meat.
