There are a few answers, and it doesn't have much to do with diet.

Firstly, the north west India has origins and settlers from a huge genetic pool. This is the same genetic pool from eastern europe and mostly the eastern jews. Punjabis have similar features such as heights, pointed noses, large eyes..etc, as these jews. There are a few theories and studied that support this and most of us have similar ancestry genetics as the eastern aryans. There was a Stanford sstudy someyears ago that focused on the punjabis genetic pools and there is also the Aryan Influx(or Invasion) Theory that also explains the gene similarities.

Err I think it might be worth reading about the unique history of the panjab and the various migrations through it.. The gene pool of the panjab is probably one of the most mixed in the entire world

I admit, biology isn't my strong point. 

Although I am vaguely aware that some Indian historians poo-poo the idea that Punjabis descend from various European races. Is that commonly accepted, or is that mindset from a fringe who perhaps don't like the idea of us originating from exclusively non-Asian genes?
