I was curious about what exactly happens at a sadhai? Like the process and everything. Would like to extend my knowledge of sikhi and getting pest is a very popular topic.

At Amrit Sanchaars before everyone goes in, the people who are there for sadhai are asked to come in one by one. You enter, matha tek to Maharaj, and then tell the 5 pyare the kurehit or galti you did. Based on your kurehit they will decide if you need Amrit again or not. All 4 kurehits require Amrit and some sookham galtiyan as well. Then they will also tell you the tnkah. It could be doing paath or seva or both.

Before you pesh however make sure you're ready and wont make the same mistake.

Do not be afraid. They will forgive you as it is their nature to do daya on a jeev.

One should be alone with the Punj Pyare during the peshi/sudhai. There is a code of anonymity related to anyone getting sudhai/peshi.

what if one needs a translator just wondering I've heard you can bring someone in though with you.

They will arrange - usually one of the sevadaars present doing seva in the Punj Pyare or Pehradaar or Granthi Singh etc. will be able to do the translation and still maintain the confidentiality needed. It is best to go in alone first and depending on the needs, arrangements can be made.

If the Kuhrait is adultery does the partner have to be there also and informed of the betrayal?

Partner = unsure if that means spouse or the person with who adultery is committed.

In cases of adultery, the amritdhari guilty person is responsible for going and the Punj Pyare.  Adultery can be committed by single or married people. In case of an unmarried amritdhari person, the unmarried person should go definitely, without regard to the other party.  If the other person who had committed adultery is also, God Forbid, amritdhari, they should also go to an amrit sanchar - not necessarily to the same amrit sanchar, but he/she is also liable.  A non-amritdhari party in adultery is not liable to go to the amrit sanchar as they have not committed to being part of the Khalsa Panth and its requirements.  They may be subject to their own faith's consequences for adultery, if they profess a faith.

If you are married, your spouse should be in the proximity of the amrit sanchar in case he/she is summoned as well (and it would be more likely than not).  While there is confidentiality, breaking that sacred commitment of Anand Karaj has consequences.  All is up to Punj Pyare, but they may very well summon the spouse, inform the spouse of the adultery and take any further action deemed necessary.
